When you cook meats, poultry or fish on the grill, it is a good idea to use marinades to enhance the flavor rather than a sweet barbecue sauce. Marinades can be made from a combination of fruit juices, wines or spirits, herbs and spices, garlic, onions and peppers. Some marinades also help to tenderize.
