Nothing rounds out a summer day quite like a meal cooked on the grill.

When you cook meats, poultry or fish on the grill, it is a good idea to use marinades to enhance the flavor rather than a sweet barbecue sauce. Marinades can be made from a combination of fruit juices, wines or spirits, herbs and spices, garlic, onions and peppers. Some marinades also help to tenderize. Don't forget to select lean cuts of meat and trim all meat and trim all visible fat. 

Vegetables marinated and cooked on the grill are wonderful too. Combine different vegetables or mix with fruit. The more vegetables and fruits are better, because it is important to have at least five servings of vegetables and fruits a day. 
 

When food is soaked or "marinated" in a marinade, food flavors are enriched, meat is tenderized, and food stays moist while grilling. 

To safely marinate foods: 

Marinate in a non-metal container in the refrigerator. 

Do not marinate more than 24 hours (Meat will become mushy if left too long.). 

Save some unused marinade to baste food during cooking.
